Winemaking: Harvesting by hand.
Maturation in 500-litre barrels.
Tasting notes: The key characters in this wine are its tension, minerality and sense of place. This is an uncompromising wine that steers clear of exuberance.
Food pairings: Cheeses (Comté, Beaufort…) and poultry.
